This consolidated design eliminates the fragmented workflow of separately positioned prep tables and ingredient refrigerators, enabling pizza assembly, salad construction, and sandwich making to occur from a single ergonomically designed station. The under-counter cabinet maintains +2°C to +8°C using R134a or R290 refrigerant, keeping bulk ingredient supplies cold immediately below the prep surface for rapid restocking of the GN pans above. The heavy-duty food-grade PE cutting board runs along the full front edge, providing a dedicated workspace for ingredient assembly and plating.

The top pan section is cooled by a dedicated evaporator line running beneath the GN pan rails — a direct-contact refrigeration design that maintains ingredient temperatures in the critical +2°C to +8°C range even in hot kitchen environments. This is a fundamentally more effective cooling approach than the forced-air alternatives used in some saladette designs, where warm kitchen air mixes with the cold air above open pans and compromises temperature stability. The retractable insulated stainless steel hood cover can be closed over the pan section during preparation gaps and service transitions, dramatically reducing heat ingress and maintaining ingredient temperatures during periods when the pans are not being actively accessed. A full set of 9 GN 1/3 stainless steel pans is included with the 1800mm model.
